Tips For Cooking With Lentils

An inexpensive and nutritious food, lentils are high in dietary fiber, iron, protein, folate, magnesium and potassium. Lentils are cholesterol free, low in calories, and low in fat. An ideal source of protein for vegetarians and vegans, lentils can provide a healthy nutritious meal on a budget.

Lentils come in a variety of colors and flavors, black, orange, brown, yellow and green, smaller lentils usually have a better flavor. Lentils are versatile and can be used in soups, stews and salads. They absorb flavors well so they can make a variety of dishes, from a hearty warming soup to a spicy curry or chili, just add your favorite seasoning, spices and herbs. Lentils are often cooked with ham, but also taste great with lamb, beef chicken and in vegetarian dishes.  Read on.....

Very Cherry Berry Cottage Cheese

Ingredients
About 4oz Lowfat Cottage Cheese
2 tablespoons cold pressed organic flax oil
1 tablespoon cold pressed raw organic sesame oil
2 heaped tablespoons ground flax meal
4 oz thawed, Trader Joe's Very Cherry Berry Blend (Frozen Berries)
Directions
In medium bowl  ground flax meal, flax oil, sesame oil and cottage cheese.  Using electric mixer, blend together for one to two minutes.  Stir in berries with large spoon or spatula until mixture has an even color.
Serve - makes a delicious, healthy dessert or breakfast. 


Eat everyday to provide healthy Essential Fatty Acids (EFA's), antioxidants, and sulfur.
